Melon Kiwi Salsa
2 cups cantaloupe (Cut in chunks)
½ cup chopped Kiwi
1/4 cup diced red onion
2 tablespoons chopped fresh basil
1 medium fresh red or green chile (minced)
2 tablespoons fresh lime juice
1/4 teaspoon salt
Mix together all ingredients and serve.
Strawberry and Feta Salad
6 cups fresh spinach, rinsed and torn into bite size pieces
1 pint strawberries, hulled and sliced
¼ cup red onion, chopped
1 avocado, chopped
4 ounces feta cheese
1 small can mandarin oranges, drained
Combine all ingredients and serve with your favorite low calorie dressing.
Citrus Strawberry Drink
1 pink grapefruit
4 ounces strawberries
Peel grapefruit and orange. Separate into sections and put in blender. Peel and cut lime into fourths, add to blender. Hull and slice strawberries in half and add to blender. Blend until drink is smooth.
